Personally, I’d find it amusing and wouldn’t mind if someone suddenly started speaking casually—though it reminds me of the “casual-speech McDonald’s” in Odaiba. (Although these days, there may not be many people who know what I mean.)
Generally speaking, though, I think using polite language is the safest choice. Once you’ve gotten closer, I feel that moderately polite speech is probably just right—but some people may prefer casual speech once you’ve become friendly.
That said, I’m sure there are also people who don’t like being spoken to casually.

Basically, most women speak to me politely. Once we’ve gotten to know each other fairly well, I sometimes think it would be nice if they didn’t have to use formal language—but then again, I also wonder if they’re using it to keep a certain distance.
