I asked a few women who had used these apps, and their answers made sense. They said that after exchanging LINE or other contact information, some people block the other person on the app for two reasons: to prevent them from reporting harassment and leaving a record on the account (apparently, you can’t report someone after being blocked), and to reassure them by saying, “I quit the app, so I’m not meeting anyone else anymore” (even though they haven’t actually quit). I’m speaking from the male side, but I think that’s certainly a possibility.

I think it’s because she has a habit of blocking men on the app if she finds them boring.
