Personally, I’d wait a few days after making a full recovery—ideally after getting the doctor’s approval—and then resume dating as usual.

If you’ve fully recovered, there shouldn’t be a problem. On the other hand, if you’re worried about passing on an infection, it’s best to hold off.
If you’ve been seeing her for over a year, she may be hesitant to bring it up herself. Since it can be difficult for a woman to make the first move, I think you should reach out to her.

These days, even announcers and actors who’ve been infected seem to return to work fairly quickly, so I don’t think there’s necessarily much to worry about.
Since you’ve been seeing each other for a year, it doesn’t sound like she works in a nightlife-related job with a higher risk of infection. If that concern isn’t an issue, I think I’d meet her if I were in your position.
