Depending on his response, you may also be able to tell whether he simply used COVID as a convenient excuse to turn you down.

If it was canceled rather than postponed, I think it’s best to assume it has simply fallen through.
The man may be thinking that he’ll make another offer when the opportunity arises, but by then, many new women will likely have registered. As a result, men often end up making offers to the newcomers instead.
I can’t say for sure whether that’s the case with this particular person, but I think it would be best to move on and wait for a new offer.

I wonder whether this is a cancellation or simply a postponement. No one knows when COVID will finally be brought under control.
If it hasn’t been long since you were notified of the cancellation, why not ask the staff to pass along a message like, “I’d be happy to meet again once things have settled down”? There probably isn’t much else you can do for now.
Once COVID settles down, he may make you another offer if he’s still interested in you. On the other hand, if he’s captivated by a beautiful new girl who has just joined, you may not hear from him again…
For your own peace of mind, I think it’s better to go about your daily life without worrying too much.

Since he said it was due to COVID, I’d say the chances are probably slightly better than 50/50.
