I don’t think many men would consider you greedy for choosing sushi.
That said, I have heard that men can feel put on the spot when teppanyaki is suggested.

I don’t mind at all, but when someone says they love carbs, I do find myself checking whether they’re overweight—or at least checking their weight.
It’s not that I’m greedy about food or anything. One woman I know eats teppanyaki, moves on to the tempura section, and then even orders sushi.

Honestly, hearing her say sushi would be ideal.
Men genuinely enjoy sushi and Japanese food too, and it’s easy to eat without feeling too full. It’s also perfectly natural for a younger woman to eat a lot, so there’s no need to worry about it.
There are also plenty of sushi restaurants, with a wide range of prices and atmospheres, making it easy to choose one that fits the occasion. They’re often easy to get into even when it’s busy, and you usually won’t end up staying too long, so I think sushi is perfect for a first date.
That said, if she asks what you’d like when making the offer beforehand, answering with only “sushi” might not leave the best impression. Saying “sushi or Japanese food” would probably come across better.
