I’ve gone on dates with several women who had sent me a “You seem lovely.”
Fortunately, it seems the women I met had been very selective about who they sent it to. They were genuinely pleased to hear from me, and they had also read my profile.
On the other hand, I’m sometimes puzzled when a woman turns down my offer for no apparent reason, or when I receive a “You seem lovely” from someone who lives so far away that I wonder why she sent it in the first place.
Reading U.S.T.’s answer, it seems some women send them out indiscriminately.
I believe someone previously mentioned on the message board that it would be nice to have a messaging feature instead of just being able to send a “You seem lovely.” If such a feature were available, I think the number of offers would increase even further.

If this is referring to a staff comment, she may not even know it was written there.
For example, a staff member might ask, “You’re quite tall. Do you prefer tall men?” In that situation, she may have replied, “W-well, yes,” even if that isn’t really the case.
Alternatively, she may simply prefer taller men if all else is equal—but not care about height if someone makes her an offer. The part in parentheses may be what she really thinks, but it might not have been included in the profile.
I don’t know exactly how the information was obtained, but it may be worth keeping in mind that this is one possibility.
If you like the woman but noticed that her profile says she prefers tall men, you could ask the staff something like:
“I’d like to make her an offer if my height isn’t an issue, but could you please find out how she really feels about it?”
If they tell you that email inquiries aren’t possible, you could simply make the offer and write:
“I’m ___ cm tall. If my height is a concern, I don’t think we’ll both be able to enjoy the experience, so please feel free to decline my offer.”

Since she said, “You seem wonderful!”, I think she probably found qualities other than your height appealing and judged you to be attractive enough, even if your height wasn’t exactly what she had hoped for.
If you’d be happy to send her an offer in response to “You seem wonderful!”, you could add a little playful humor, such as:
“I’m not particularly tall, but…”
“Should I wear platform shoes when I come?”
“Please refrain from wearing high heels…”
Including a condition that makes it easier for her to accept your offer, while adding a touch of playfulness, might be a good approach.
