Would it be considered bad manners to use the profile photos taken for me by Universe as my profile pictures on other papa-katsu (compensated dating in Japan) sites?

Regarding this matter, the copyright most likely belongs to the photographer or their company.
That means you cannot use the photo without the photographer’s permission. It may seem strange since you’re the one pictured in it, but that’s how the law works. Using it without permission would violate proper etiquette as well as the law.
For that reason, more and more photographers have recently been declining to give photos to the people pictured in them.
