I’m also uneasy because the club staff aren’t involved in the dates. Some of the men who message me are also members of Universe Club. Why don’t they make offers through the club instead? When declining, is it okay to be honest and tell them exactly that?

If you don’t need it for now, why not set it to “hidden” rather than deleting it? You can always make it visible again when you need it.
