If age doesn’t matter to the woman, I don’t think there’s anything in particular to worry about based on her age.
I use polite language at first even with younger women, and I switch to a more casual tone with older women once we become close.
That said, wonderful older women tend to have a sharper eye than younger women, so they’ll probably notice any careless treatment. Be thoughtful and treat her with care and respect as a woman.

That overly eager “Please teach me!” attitude can really kill the mood, and it also feels rude to arbitrarily assume that someone’s allowance should be lower because of their age.
Just be natural—don’t be overly formal.

If she’s much younger than me, I’d feel a little self-conscious walking around outside for a long distance together.
As for meals, I prefer somewhere casual rather than overly formal—maybe a nice izakaya that isn’t too quiet or filled exclusively with young people. A private room would also be good.
If you’d like to invite me back to your room, please be clear and straightforward. You can even be a little assertive.

I don’t think you need to worry about that. Though, it’s probably best to avoid saying or doing things that come across as belittling.
Whether it’s an ordinary adult relationship or the asker is extremely sadistic—putting their fingers up my nostrils and pulling, putting a hand in my mouth to make me gag, or tying me up—I don’t think age matters.
It’s the same with someone who’s extremely masochistic or into cross-dressing. If you prepare high heels, I’ll let you step on my face. While giving you an oil massage, I’ll use feather-light touches around your groin and lick your 〇〇ル too, until I make you cry.
Also, try gradually dropping the formal speech.

I’m in Seattle.
When I dated someone older, they told me around our third date that I didn’t need to use polite language anymore.
If they’re around my age, I might switch to speaking casually once we’ve gotten closer.

Since you’re both Japanese women, I don’t think there’s any real difference.
If I had to offer one piece of advice, it would be not to put too much pressure on yourself.
