If you don’t say things like “French cuisine at ○○” or “sushi at △△,” I don’t think you’ll come across as stuck-up.
Even if you do say something like that, you’re more likely to be seen as experienced with papa-katsu (compensated dating in Japan) than as stuck-up.

I might feel that way if she said she wanted to go to La Tour d’Argent, haha. But not all French restaurants are upscale—there are plenty of reasonably priced places that serve delicious food.
Since you have a chance to have someone treat you, you should honestly request whatever you really want to eat.

I think it’s a good idea to answer with something like, “French or Italian,” or “French or Japanese.”
Alternatively, you could say, “I eat anything and don’t have any dislikes,” or “I love all of them—Japanese, French, and Italian.”
If the man is asking, that usually means he’s open to whatever the woman prefers. He’s probably considering options like French, Italian, sushi, Japanese, teppanyaki, yakiniku, shabu-shabu, Western food, or a bistro, so he’ll likely take you to a delicious French restaurant or somewhere even better.
Based on the women’s responses so far, Italian is the most common choice, followed by teppanyaki, then French and bistros. From the second date onward, Japanese food, sushi, and yakiniku tend to be more common.
From a man’s perspective, if it’s a Type B arrangement, I’d want to save a French restaurant for a special occasion on the second date or later. For Type C, French is fine even for the first date. That said, considering what comes after the meal, sushi or something similar would probably be preferable.

That said, it might be even more helpful to offer a couple of options, such as “French or Chinese.” Some papas don’t like French courses, after all.

I don’t particularly feel that way, but a full French course takes quite a while, so please consider going with casual French or ordering à la carte instead.
When I hear “French cuisine,” I tend to assume it means a full course, so I’d appreciate it if you could specify “casual” or “à la carte.”
