I’m not sure why she would get upset over something like that. Besides, saying she seems like a father to you means she reminds you of the father you care about, so I don’t think it’s necessarily such a bad thing to say.
Maybe she was hurt because she thought you were seeing each other more like a couple, only to be called “Dad.”
You could apologize while also explaining yourself, something like:
“I’m sorry. I really do like you, so I meant it in a positive way. I’ll be more careful from now on.”
After that, I’d leave her alone for a while. If she still doesn’t contact you, then perhaps it’s simply best to accept that the relationship wasn’t meant to continue and move on.
