If he responds with some dad joke like, “Oh, sorry about that,” just chant the magic words, “Milk coming out of my nose!” and everything should be fine.

I think it should be fine as long as you specify the date.
You can simply tell her that, or say it’s the eve of the occasion or the following day—since your children, family, relatives, and friends gather every year to celebrate with you.
The fact that she’s so enthusiastic may mean she sees her relationship with her husband differently from how it really is, so it might be better coming from someone other than her husband.
