I think what people want varies from person to person. It’s probably best to ask them directly what they’d like.
They may still appreciate something they didn’t specifically want, but I think everyone is happier when they receive something they actually wanted.

Aren’t you worried about choosing and buying something on your own!? It might get sold, or you could end up making her pretend to be happy.

I think the best thing to do is ask her directly.
In the past, a man I’d only met a few times after the initial offer suddenly gave me a Tiffany necklace. He treated me terribly afterward, so I ended up selling it on Mercari. Surprisingly, I had no sentimental attachment to it at all.
