I don’t think anyone really cares about the difference between being 20 and turning 21.
After all, someone who’s 20 could be 20 years and one day old, or 20 years and 360 days old. It’s no different from not worrying about that kind of detail.
Rather than focusing on odd little things, I think you’ll have a better chance of meeting a great woman if you approach it with the mindset that her exact age doesn’t matter as long as you like her.
