You can’t tell right away whether someone is the kind of person you should be honest with—or whether it’s even safe to be honest with them.
So, to be on the safe side, I think you tend to lie and say you don’t have a boyfriend. But if he’s the kind of person who values honesty, it becomes difficult to later admit that you actually do have one, and you’ve technically been lying to him…
So, to all men: don’t ask questions like that.

If I had to choose, I’d prefer her to be honest, since it helps me understand how to interact with her, and being lied to never feels good. But I don’t really care that much either way.
Many women don’t want to talk about their relationships with boyfriends or other men, so I rarely ask about it proactively.

I don’t recall hearing many men say they disliked women who had boyfriends. Still, I imagine men looking for a genuine romantic connection might feel differently.
So, partly as a way to keep those men at bay, it may be a good idea to mention that you have a boyfriend.
