There’s definitely a certain number of people who choose not to get vaccinated, right? I feel like as long as they aren’t infected with COVID when we meet, it should be fine.

I don’t think being unvaccinated is, in itself, a reason not to date someone. Perhaps the person asking simply wasn’t your type.
Isn’t it fine to just say, “I’m sorry, but I can’t date someone who isn’t vaccinated”?

They left right after the first meeting, yet he’s asking to see you again?!
Why not simply say, “I can’t date someone who hasn’t been vaccinated”?
Didn’t you mention it at the first meeting? What did you say when you left so quickly?
Rather than making up an excuse, I think you should just be honest and tell him directly.
Vaccination is a personal decision, so people may have different opinions about it. If you absolutely don’t want to meet anyone who hasn’t been vaccinated, why not state that in your profile?
