For the hotel, you can use hotel search sites, or sites specializing in love hotels if that’s what you prefer.
As for the train home, if you’re taking the Shinkansen, you should be able to get back in an unreserved seat even without a reserved ticket. Since it’s only about 40 minutes, it’s probably a local-type service anyway, not a train with reserved seats only. So I think all you really need to worry about is the last train.
Even if you miss the last train, there should be business hotels available.
How you plan the schedule is up to you.
These days, you can search and make reservations online, so I don’t think it’s particularly difficult.
