From a man’s perspective, he has to actively remove someone from his favorites. I think he simply hasn’t done that.
If something really unpleasant happened and he didn’t even want to see her face anymore, I think he’d delete her from his favorites. After all, that’s where he looks for candidates for his next offer. He probably wouldn’t want her sitting there on the screen while considering new possibilities.
Maybe he has cut things off, but still thinks, “Hmm, I don’t know…” Sometimes you don’t want to erase someone from your memory completely. Or maybe he feels that any next offer would have to be to someone better than her. If he’s still conflicted or has lingering feelings like that, I think he’d leave her there. It may be difficult to recover the relationship from that point, but there’s still a thread dangling down.
I don’t use the favorites feature anymore, but I used to. Except when someone completely new and irresistible came along, I remember making offers to people from my favorites. So I think surviving on that favorites screen must mean something. The question is how to make use of that.

They’ve already accepted your offer and exchanged contact details, yet they still have you saved as a favorite on the Universe site—and haven’t even read your messages?
They’ve probably either forgotten they added you to their favorites, or they’re leaving you there because removing you feels like too much of a hassle.

Universe staff
It’s possible for a man to leave your message unread while keeping you in his favorites—and even continue viewing your profile.
After the date, I think you should ask the staff to hide your profile so he can no longer see it.
