Don’t put your faith in fortune-telling. Why not just ask her yourself? Paying for a fortune-teller is a waste of money.
You could use that money to ask her out on a date instead. Talking about romance is the best way to get the conversation going anyway…

There’s no way they could know that.
Fortune-telling is generally said to involve drawing information out of the other person. A fortune-teller who’s good at doing that is considered to be accurate.
Of course, there are probably people who answer purely according to the principles of fortune-telling. But if that were the case, you wouldn’t really need a fortune-teller—it would just be, “If this appears, then the answer is this.”
If anything, I think a good fortune-teller is someone with strong counseling skills. Rather than simply predicting whether something about the future will come true, they help ease the other person’s anxiety. To do that, they use certain techniques to draw out information and then give their answers. When the information leading up to the actual question turns out to be accurate, the person trusts them. And once they’ve gained that trust, they can help relieve the person’s anxiety. I think someone who can do all that is a good fortune-teller.
By the way, I’m not quite sure what you mean by:

Do you mean that you want to date a woman who has never been in a relationship?
That might be pretty difficult these days, though. If you don’t specifically require her to be a virgin, there seem to be women who have sexual experience but have never actually dated anyone, so you might find someone who fits what you’re looking for if you search.

You can never understand another person 100%.
So why not decide what someone is like based on their birthday, blood type, personality tests, facial features, how they act and speak when you meet them, their reasons for applying, their background, résumé, your intuition, or whatever else?
A lot of people take fortune-telling into account too. You can’t say someone’s intuition is strange, or that they’re strange for believing in fortune-telling.
However, whatever conclusions you come to will eventually come back to you, so you’ll have to take responsibility for them. Maybe our birthdays do determine some portion of who we are.

I don’t believe anyone can accurately determine another person’s personality just from knowing their name and date of birth. Even if I’d had sex with someone 50 times, I still couldn’t describe their personality with complete accuracy.
Fortune-telling is based on a completely different way of thinking from mine. I see it as something people spend money on when they believe fortune-tellers can accurately read strangers they’ve never met.
You asked for a fortune because you believe in it, didn’t you? If so, whether the fortune-teller knew your name or not seems like a minor issue.
