If you become really close, I think a hotel-only arrangement can be fine. But if you’re not that close yet, meeting only at a hotel can make it feel too much like prostitution for both of you.

I always make sure to include a meal.
We chat over dinner about what we’ve been up to since we last met, ingredients, work, investments—you name it. We always have a great time (lol).
It’s really enjoyable spending time with the woman sitting across from me while having those conversations. That’s another thing I really like.
It’s a different kind of enjoyment from sex.
